Chocolate lava cake

CHOCOLATE LAVA CAKE

Cooking time: 30 minutes                                                                                           Serves: 10-12





INGREDIENTS:
  1. Dark Chocolate (125 gm)
  2. Unsalted Butter (100 gm)
  3. Powdered Sugar (100 gm)
  4. Refined Flour (50 gm)
  5. Almond Flour/ Meal /Powder (2 table spoon)
  6. Eggs (4)
  7. Vanilla Essence
  8. Baking Powder (1 table spoon)
  9. Salt 
  10. Muffin moulds for baking 




METHOD:
  1. In a double boiler melt 125 gm of Dark Chocolate and 100 gm of Unsalted Butter together. 
  2. Let it cool down a little bit.
  3. In the meantime, beat 4 eggs together with 100 gm of Powdered Sugar. Beat with a whisk until the mixture is frothy. 
  4. To this add 1 tea spoon of vanilla essence. Mix it well.
  5. Now, add this egg mixture to the melted chocolate and butter when it has cooled down a bit. Properly mix them.
  6. To this sieve in 50 gm of refined flour and 1 tea spoon of baking powder. 
  7. Add 2 table spoons of almond meal and a pinch of salt. 
  8. Mix everything using cut and fold method. 
  9. Grease the moulds with butter and dust in a little flour. 
  10. To this moulds add the cake mixture. Fill halfway and in the middle add dark chocolate chips. Fill in the rest of the mould. 
  11. Bake the cakes in a pre-heated oven 220 degree Celsius for exactly 8 minutes.
  12. After baked, demould the cakes and serve immediately.



NOTES:
  1. Make sure all the ingredients are at room temperature before starting this recipe.
  2. Use a double boiler to melt the chocolate and butter. It is the safest way of melting chocolate.
  3. Beat the egg and sugar mixture until it is frothy. Should take about 4-5 minutes of continuous beating. 
  4. Always add the egg mixture to the chocolate mix and not the other way round. This will ensure that the cake will rise and be fluffy. 
  5. Don't add the egg mix to the chocolate if its too hot. 
  6. Always sieve the flour to avoid lumps of flour in the cake. 
  7. Pre-heating the oven is a must. 
  8. Bake exactly for 8 minutes to get the perfect lava oozing out from the cake. 
  9. Don't forget to serve the Choco lava cakes immediately after they come out of the oven. Otherwise with the residual heat the lava will solidify.
